The Highlands at Castle Bay is located just north of Wilmington, North Carolina, in the cozy city of Hampstead, North Carolina. Legend has it that Hampstead received its name in a most peculiar way. As the story goes, George Washington planned to spend the night in the area and to enjoy eating mullet – a well-regarded local fish – caught from Topsail Sound. To his dismay, mullet had not yet come into season, so his feast was “ham instead,” providing a name that stuck in the little community.
